An Easter Lunch to Remember: Black Garlic Leg of Lamb

Easter is the ultimate excuse to gather, feast, and make something truly special for the table. And when it comes to creating a standout centrepiece with minimal effort, roast lamb reigns supreme.
This Easter, we’re taking inspiration from a beautifully aromatic recipe by none other than Nigella Lawson but giving it The Original Black Garlic upgrade.
Herbed lamb with citrus and fresh rosemary? Yes. Black Garlic in place of raw garlic? Absolutely.
Swapping in our sweet, umami-rich black garlic adds a mellow, rich flavour that pairs effortlessly with the bright citrus and earthy herbs. Think: molasses, balsamic, tamarind. Just beautifully aged depth that transforms your roast into something unforgettable.
🌿 What You’ll Need:
1 x 2kg leg of lamb
Small bunch fresh oregano
1 tbsp rosemary leaves
4 Black Garlic cloves, halved
Zest and juice of 1 lemon & 1 orange
2 tbsp olive oil
2 tsp sea salt flakes
Blend all the ingredients together and rub it all over the lamb, roast low and slow, and prepare to impress your guests with a flavour-packed showstopper. Whether you're hosting friends or family, this is the dish that'll have people asking for seconds (and the recipe!)
And while you're at it, don’t toss the pan juices. Add a splash of hot water and a touch of honey for a rich, pour-over drizzle that elevates the whole thing even further.
