Crostini with Aubergine Black Garlic Hummus


Amazing appetizer canapé recipe, perfect to add to your vegan or vegetarian party platter. Rich, packed with flavour and mega healthy.


1 long ciabatta or baguette
1/2 recipe for Roasted Aubergine and Black Garlic Hummus
20 cherry tomatoes
Salt, Pepper
15 Fresh Basil leaves, torn
Olive oil


Preheat oven to 200C/392F. Slice ciabatta into ½ inch thick pieces, arrange them on a large baking tray. Lightly brush the top side of ciabatta slices with olive oil. Toss cherry tomatoes with a small amount of olive oil (or brush them if they are on a vine) and also place them on a baking tray.
Bake in a preheated oven for 7-8 minutes.
Remove the tray from the oven and let it cool off for 5-10 minutes.
Spread 1 heaping tablespoon of hummus on each slice of ciabatta, top up with 1-2 cherry tomatoes and basil, season with salt and pepper and serve!
