chilli con carne
warm & comforting dish made with delicious ingredients like turmeric and black garlic, which are full of immune system nurturing qualities.
Ingredients

2 medium size yellow onions, chopped

2 celery sticks, chopped

Generous splash of olive oil

4 raw cloves of garlic, chopped

1 tbsp your choice of chilli powder

1 medium red chilli

1 tbsp ground cumin
-
3 tbsp ground turmeric
-
1 tbsp ground coriander
-
2 lbs ground beef (or chunks, sliced to mouth size pieces)

1 large bell pepper
-
1 can chopped tomatoes (400g/14oz)

2 cans red kidney beans (2x400g/14oz)

Salt & pepper to taste

50g The Original Black Garlic cloves, sliced thinly & more to serve

150 ml beef stock
-
1 large glass of dry red wine (about 200ml-250ml)

2 tbsp unsweetened cocoa powder or 100g dark chocolate (optional)

To serve

sour cream, grated cheddar, scallions
In a large, pan cook celery and onion in oil until softened. Add raw garlic, turmeric, chili powder, fresh chilli, coriander, cumin and allow to toast for about 2 minutes.
Increase heat to medium high, add beef and cook it until cooked through, about 10 minutes. Transfer everything to slow cooker and follow with tomatoes, beans, bell pepper, stock and any optional ingredients. Cook for 4h on high or 7h on low heat setting. In the last 40 min, turn heat up to high and add wine and chopped black garlic.
